On Saturdays we eat pancakes...


... buttermilk pancake with coconut,  topped with sliced banana and drizzled with maple syrup.





Penne with Tuna and Artichoke


Tick, tock -- tick, tock -- done. It takes no longer than twenty minutes to prepare this dish.  A box of penne pasta in salted boiling water then drained and sauteed in olive oil, artichoke, grape tomatoes and canned tuna.

Pork in Banana Leaf


It’s back-to-back Hawaiian dish this week.  Tonight is pork butt and taro cooked in banana leaf on a 350-degree oven for 2 hours.

Loco Moco


This is a delicious Hawaiian dish that is very easy to make.

The arsenal…

Gravy: beef stock, olive oil, Worcestershire sauce, soy sauce, mushroom, corn starch, salt and a little bit of water 

Patty: ground bison, diced onion, egg, milk, Worcestershire sauce, panko, freshly grated nutmeg, salt and pepper

The patty is then topped on rice with sunny side egg, drizzled generously with gravy and then garnished with green onions.

Coffee Mugs


Love these mugs hubby brought home the other day.



Casserole Chicken with Olives and Thyme


Chicken wings and thighs cooked on a Dutch oven in batches until both  sides turned brown. Then the rest of the ingredients were poured/added in... a can of chopped tomatoes, a cup chicken broth, black olives, capers, yellow bell pepper, bay leaves, sprigs of thyme, rock salt and a good cracking of black pepper.

On to a 350-degree pre-heated oven for an hour.

It's Veterans Day. No school for our Little Guy so we met-up with hubby for lunch at Lucille's in The Village.

Cavatappi & Chicken Soup


I cooked a box of cavatappi two ways -- with tuna and veggies for me and soup with chicken and celery for hubby and the Little Guy.

Husband bought this frozen from a friend.  It was simmered in water first until fully cooked then fried in canola oil.

Chicken Adobo


A quintessential Filipino dish usually made of pork, chicken or a combination of both. For tonight's supper I used chicken, cooked on very low fire in sauteed garlic and onion, three bay leaves, a handful pepper corns, a cup of soy sauce and  half a cup water.  An hour later I added about half a cup vinegar and then cooked for another fifteen minutes.

Chicken in Rosemary Sauce


These are organic free-range chicken thighs cooked with store-bought rosemary sauce on a 350-degree convection oven for 45 minutes.

Then garnished with a sprig of rosemary from the garden.

Today, we were at Little Tokyo. We drove around, strolled at the Japanese Village, had ramen and donburi at Maruya, then we headed to Chinatown.
