Sausage, Collard and Cherry Tomatoes


Inspiring the Little Guy to enjoy eating dark leafy greens like collard and kale.

I sauteed the Italian sausage in caramelized sliced onion and crushed garlic -- breaking it apart into smaller pieces with the end of a wooden spoon until cooked all the way through. Then I poured in a cup of broth. When small bubbles appeared I turned the heat down a little. Then finished off with cherry tomatoes and the nutritional power house collard.

There you go -- simple and colorful. 

Always remember to eat your greens!
