Mung Beans and Smoked Fish
This is a typical Filipino meal -- meat/fish + vegetables + rice.
The mung beans (ginasang monggo) was cooked on a pot of water for about an hour. Meanwhile, on a separate pan, I sauteed chopped garlic, sliced onion, diced fresh tomatoes and pork. Then, I poured them on the mung bean pot. Thirty minutes later, I added the chili leaves. Seasoned with salt and pepper, and then eaten with store-bought smoked fish (tinapa) dipped in soy sauce/lemon mixture... Yum!
