Salmon and Mediterranean Veggies
The salmon was pan-fried in canola oil on a grill pan while the veggies -- broccolini, tomatoes,potatoes, cucumber and mushroom -- were cooked on a separate pan. When veggies were cooked they were placed on a large platter and then topped with the pan-fried salmon.
